Menu Planning Monday

Welcome! Following are my dinner meals for the week...

Monday - Homemade Chili, Cornbread and Salad

Tuesday - Whole Wheat Wraps Stuffed with Stir Fry Veggies and Tofu.

Wednesday - Crispy Oven-Fried Fish Fillets, Oven Baked Fries, steamed broccoli and carrots.

Thursday - Beef and Broccoli Stir Fry, Brown Rice and Mixed Fruit Salad

Friday - Leftovers

Saturday - Feta Pesto, Tossed Salad and Whole Wheat Rolls

Sunday - Broccoli Salad, Baked Chicken Breasts, Twice Baked Potatoes.

I am soo sorry you have been having backs problems...I can so relate to anyone who suffers. I do hope a little bed rest,ice and warm bathes will help along with some pain meds.
Your menus sound delish....don't over due.
Our lives are so NOT our own right now. with dad so ill and going down hill so fast we spend so much time with him.
But tomorrow we need to go to Colorado for dental work and then to Boise on Friday to bless our baby. I pray he will be alright while we are gone. He is so feeble and his mind goes more each day. It breaks my heart.
Hey get better and have a fabulous week...no I don't take good days for granted. Our health is so important.

I am just not that organized my dear friend...how I dread Mondays coming here...grin....the guilt seeps down my shoulders as I see how well you have it all in place. Oh well, with the son gone and the hubby teaching nite classes four nights a week...I can have 'whatever' right? Actually, I make one big pot of soup each weekend and that turns out to be my little portions all during the week...sounds so tempting right? Ha!

The thought of broccoli salad is making my mouth water. I love that salad with candied walnuts and dried cranberries! Mmm.
