Happy Labor Day!
But first, a few words about Labor Day.
According to Wikipedia, Labor Day was instituted as a celebration of "the economic and social contributions of workers." Labor is something that we all partake of throughout our lives and many of us think of it in a negative light - that which is hard or difficult. I use to look at it that way. Instead, I prefer to now think of it as the opportunity of working with our hands and the sacrifice of our time for the greater good. I know that is very idealistic thinking, but labor is not a burdon, it can be for the betterment of our lives, our family, our communities and even all of mankind. It is a blessing.
Partaking of meaningful work is a challenge, because sometimes all we are able to obtain for ourselves is a job of questionable benefit and we do it to earn a paycheck. The goal, though, should be to find something to do that is really useful to others which can bless and help. That makes all of our hard work fulfilling and "worth it".
Work can be through a professional vocation, a volunteer position and at home with our families. In fact, I think that the truly difficult and most rewarding work of all is within the walls of our homes.
Whatever our circumstances, even if we have a professional job that leaves a lot to be desired, we should look for and find ways to contribute in a way where we feel our efforts have mattered to someone. Making a real difference is what allows us to go to bed at night and to rest in peace, even as our bodies and minds are fatigued from the challenges of the day.
In fact, I think that using our God-given gifts and talents to uplift and help others is the crowning achievement of this life, in whatever way we find to do that. This should be the goal of every single one of us.
It is my prayer that the Lord will bless our efforts and help us to be focused on the blessings of our labors and help us to always consecrate our time, efforts and energies to blessing his children and furthering His purposes.

A wonderful Monday to you. Hope you are all energized to begin a new week. We have snow on the ground here on this last day of January. However, I am ready and enthusiastic about February beginning.

Menu, January 24th and Casserole Recipe
Today, is of course, Monday. This is the day that I bless my home with cleaning. I need someone to light a firecracker under my bum so that I get moving. Some days it's hard to get the old caboose going. Anyone else out there like that?
What motivates you to get going on cleaning?
I also have lots of laundry to do. I enjoy ironing while watching a movie or good show. That is a treat for me.

Menu for Week of January 24th
Monday - Tater Tot Casserole*, Tossed Salad and Dessert (Gingerbread Cake)
Tuesday - Tuna Melts, Fruit Salad
Wednesday - Black-Eye Peas, Cornbread and Greens
Thursday - Chicken Fingers, Steak Fries and Salad
Friday - Homemade Pizza
Saturday - Stir Fry (to be determined)
Sunday - Ham, limas, mashed taters, squash and pie.

Here is my personal recipe for Tater Tot Casserole.

Tater Tot Casserole
1 cup chopped onion, sauteed
1 can of green beans
1 1/2 cans Cream of Mushroom Soup
1 lb. Tater Tot crowns
pinch of parsley flake
Once browned, use a spatula to break up the hamburger as much as possible. Then add the cream of mushroom soup, sauteed onions and green beans.
Set aside until Tater Tots are done. Layer the hamburger mixture into a 9x13 pan and arrange Tater Tots over the top until covered.
Bake for 10 minutes and ENJOY!

Menu Planning Monday, January 10th
We finally took down all of our Christmas decorations and tree. Now, we are set to enjoy this wonderful January with snow and cold. Ha, ha. Perhaps that doesn't sound like fun, but I love it.
Anyone else out there in love with Winter?
I haven't posted a weekly menu in awhile. I am happily doing so below. As you will see, I am really into Asian Cooking. I would have something Asian every night if I could, but I don't want to tire my family.

Christmas Give-Away Winner and Menu Planning Monday

Happy Monday, Friends and Visitors!
I hope everyone enjoyed a lovely weekend. We got our Christmas tree on Saturday and got the lights on it last night. Tonight, we have a fun neighborhood Christmas party attend, after which I'm going to coerce my daughter to help me decorate our tree. :)

I have been working feverishly on menu planning for all three meals, so here goes...

Back In The Saddle Again!
After being unable to blog for almost two months, during which time my computer had just about everything replaced on it that could be replaced, I am back up and running and excited to be here in Blogland again.

Is anyone else out there excited about Spring? Especially those in my area (Northern Utah) should feel thrilled as we have had a L.O.N.G Winter. We have had snow on and off steadily since February. We need the water, but, enough already! Now, my apple tree is blooming and things are warming up. My favorite backyard birdies are making whoopee out in the lilac tree that hangs over our fence from our neighbors and some birdies have already settled down and made a home. Mr. and Mrs. House Finch are at our feeders, mornings and evenings, as are Mr. and Mrs. Dove and a group of Chickadees. Will let you know when the little ones begin mature enough to leave the nest as they are generally hopping around (will keep the cat in when that starts!).
What signs of Spring are around where you are?

Menu Planning Monday & Updates on Prayer Requests

Welcome to Menu Planning Monday! This week, I'd like to share some of the recipes from the menu that I posted on August 30th (HERE) .
SHANGHAI PASTA
12 oz. dry linguine
3 T. soy sauce
1 T. plum sauce (I used strawberry preserves)
1 t. toasted sesame oil
1 medium green pepper, cut into bite-sized pieces
1 cup fresh green beans, cut into 1 inch pieces (I used frozen and broke them into same)
12 oz. frozen, peeled and de-veined large shrimp without tails, thawed*
2 cloves garlic, minced
1 t. grated fresh ginger
1/4 t. ground pepper
2 green onions, bias-sliced into 1" pieces
2 t. toasted sesame seeds
Directions:
Cook pasta according to package directions. Drain. Keep warm. For sauce, stir together soy sauce, plum sauce, sesame oil, and chilipaste. Set aside.
Pour cooking oil into a wok or large skillet. Cook and stir sweet pepper and beans in hot oil 5 minutes. Push from center of wok. Add shrimp, garlic, ginger, and black pepper to center of wok. Cook and stir 2 to 3 minutes or until shrimp are opaque. Stir in sauce and green beans. Stir in pasta, heat through. To serve, top with onions and sesame seeds.
BALSAMIC PORK CHOPS
4 boneless pork chops (5-6 oz each), about 1" thick
1/2 cup balsamic vinaigrette dressing
1 1/4 cup chicken broth
1 1/2 cups red seedless grapes (9oz), halved
1 box (5.6 oz) couscous mix with toasted pine nuts*
* I used whole wheat couscous and added my own toasted pine nuts
Directions:
Marinate chops in 1/4 cup of the vinaigrette for 30 minutes. Remove and pat dry. Season with 1/4 t. salt and 1/8 t. pepper. Heat 1 T of oil in large skillet. Saute pork chops 2 minutes each side to brown. Set aside.
Add 1/2 cup of chicken broth, grapes and remaining vinaigrette to skillet. Simmer on medium for 5 minutes. Add pork chops back into skillet and cook for an additional 5 minutes until internal temp register 160 degrees.
Prepare couscous according to package directions, substituting 1/1/4 cups chicken broth for water.
To serve spoon chops and grapes mixture on top of couscous.
Serve with steamed asparagus...

My son, Robert, is to see a specialist on Wednesday. Hopefully, they will figure out what his troubles are and can set a course of action which will lead to his recovery.
